  1. Prepare the potatoes: Peel the potatoes and cut them into 1cm-thick batons. Place the cut potatoes into a bowl of cold water and soak for at least 2 hours. This step helps remove excess starch, ensuring the fries become crispier when cooked.
  2. Dry the potatoes: Drain the soaked potatoes thoroughly and pat them dry with kitchen paper to remove all moisture. This prevents oil splatter and promotes even frying.
  3. First fry: Fill a deep pan with vegetable oil up to one-third full and heat to 140°C (or until a cube of bread browns in 60 seconds). Fry the potatoes in batches for about 6 minutes each until they turn a golden straw color, are cooked through but only lightly crisped. Remove and drain on kitchen paper.
  4. Increase oil temperature: Turn up the heat until the oil reaches 180°C (or until a cube of bread browns in 30 seconds). This higher temperature is essential for the final crisping stage.
  5. Second fry: Fry the potatoes again in batches for 2-3 minutes each until they are lightly golden and really crisp. Drain thoroughly on kitchen paper to remove excess oil.
  6. Season and serve: Immediately sprinkle the fries with sea salt while still hot and serve fresh for the best taste and texture.
