This refreshing chilled green soup combines creamy avocado, fresh baby spinach, crisp cucumber, and vibrant herbs, blended together for a smooth, nourishing texture. Topped with tangy vegetarian feta marinated in olive oil, coriander seeds, chili, and lemon zest, along with toasted mixed seeds, this soup is perfect for a light, healthy meal or starter on warm days. For the Topping
- 70g vegetarian feta, crumbled
- 3 tbsp olive oil
- 1 tsp coriander seeds, crushed
- 1 large red chilli, deseeded and finely chopped
- 1 lemon, zested
For the Soup
- 200g baby spinach
- 2 large ripe avocados, stoned and cubed
- 1 large cucumber, chopped
- 1 small garlic clove, crushed
- 250g natural yogurt
- small bunch basil
To Serve
- 2 tbsp toasted mixed seeds
Instructions
- Prepare the feta topping: Place the vegetarian feta in a bowl and drizzle over the olive oil. Sprinkle the crushed coriander seeds, chopped red chilli, and lemon zest on top. Set this mixture aside to marinate while you prepare the soup.
- Blend the soup ingredients: In a food processor, combine the baby spinach, avocados, chopped cucumber, crushed garlic, natural yogurt, basil, and the lemon juice. Blitz until completely smooth.
- Adjust consistency and chill: Season the blended soup with salt and pepper to taste. Add 50-100ml of cold water and blitz again to loosen the consistency to your preference. Transfer the soup to a container and chill in the refrigerator for up to 1 hour.
- Serve: Pour the chilled soup evenly into four bowls. Spoon the marinated feta mixture over the top, including the oil and seasonings. Finally, sprinkle the toasted mixed seeds over each serving for a crunchy finish.
Notes
- For a spicier soup, leave some seeds in the red chilli or add extra chilli according to taste.
- Vegetarian feta can be substituted with regular feta if desired.
- Use full-fat natural yogurt for the creamiest texture, or a lighter version to reduce calories.
