- 3 sweet potatoes, cut into wedges
- 16 baby plum tomatoes, halved
- 3 handfuls of rocket, dressed with 1 tbsp balsamic vinegar

- 1 small whole brie

- 6 slices prosciutto
- 6 slices salami
Pickles and Peppers
- 12 cornichons
- 12 mixed olives
- 12 Peppadew peppers
Seasonings and Oil
- 2 tbsp olive oil
- 1½ tsp thyme leaves
- Salt and pepper to season
Instructions
- Prepare the sweet potatoes: Heat the oven to 200C/180C fan/gas 6. Place the sweet potato wedges into a large bowl, add 2 tablespoons of olive oil, 1 teaspoon of thyme leaves, and salt and pepper to taste. Toss well to evenly coat the wedges with oil and seasoning.
- Roast the sweet potatoes: Arrange the coated sweet potato wedges in a single layer on a non-stick baking sheet. Roast in the preheated oven for 20 to 25 minutes, or until tender and golden, turning halfway through for even cooking.
- Prepare the brie: While the sweet potatoes start roasting, remove the brie from its packaging and place it in a snug ovenproof dish. Cut slits in the top of the brie and sprinkle the remaining ½ teaspoon of thyme leaves over it.
- Bake the brie: Bake the brie in the oven alongside the sweet potatoes for the last 10 minutes of their roasting time, allowing the cheese to warm and soften beautifully.
- Assemble the board: Place the baked brie in the center of a large serving board or platter. Arrange the roasted sweet potato wedges, prosciutto, salami, cornichons, mixed olives, Peppadew peppers, halved baby plum tomatoes, and dressed rocket leaves around the brie attractively, making it easy for guests to help themselves.

- Use a non-stick baking sheet or line a regular baking sheet with parchment paper to prevent sticking and make cleaning easier.
- You can substitute the rocket with other salad greens like arugula or baby spinach if preferred.
- For added variety, include nuts, crackers, or artisan bread alongside the board.
- The brie can be baked until just softened or longer for a gooey texture depending on preference.
