Scale

Dip Ingredients

  • 8 ounces cream cheese, at room temperature
  • 2 cups cooked shredded chicken
  • 2 cups fresh or frozen corn
  • 3/41 cup buffalo sauce
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • 1/2 cup ranch dressing
  • 1/3 cup crumbled blue cheese (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack or colby jack cheese

Serving

  • Hard pretzel twists, for serving

Instructions

  1. Preheat the oven: Set your oven to 400° F (204° C) and butter a 10-inch skillet or baking dish to prevent sticking and help with easy cleanup.
  2. Mix the dip ingredients: In a medium bowl, combine the room temperature cream cheese, cooked shredded chicken, corn, buffalo sauce, chopped fresh cilantro, and chopped green onions. Add the ranch dressing and optional crumbled blue cheese. Season with freshly ground black pepper to taste. Stir everything until it reaches a creamy, well-mixed consistency.
  3. Assemble and bake: Spoon the creamy mixture into your prepared skillet or baking dish, spreading it evenly. Then top with the shredded cheddar and pepper jack or colby jack cheeses. Place the dish in the oven and bake for about 20 minutes, or until the cheese on top is fully melted and bubbly.
  4. Serve: After baking, garnish the dip with extra fresh herbs like cilantro if desired. Serve hot with hard pretzel twists for dipping. Enjoy the delicious combination of spicy buffalo flavors and creamy cheeses!

Notes

  • You can use either fresh or frozen corn; if frozen, thaw and drain excess water before mixing.
  • Adjust the buffalo sauce amount to your preferred spice level.
  • Blue cheese is optional but adds a nice tangy flavor.
  • If you don’t have a 10-inch skillet, any oven-safe baking dish will work.
  • For a thicker dip, reduce the amount of ranch dressing slightly.
  • This dip can be prepared a few hours ahead and refrigerated; bake before serving.
