Instructions

  1. Prepare the Egg-Cream Mixture: If the white bread slices are not pre-sliced, slice them now. In a bowl, whisk together the beaten egg and thickened cream until well combined to create the soaking mixture.
  2. Soak and Fry the Bread: Dip each slice of bread into the egg-cream mixture, ensuring full coverage. Heat coconut oil in a pan over medium heat and fry each soaked bread slice until both sides are golden brown and slightly crisp. Remove and set aside.
  3. Make the Toffee Sauce: In a nonstick saucepan over medium heat, combine the unrefined dark brown sugar, butter, and fresh cream. Stir continuously until the sugar dissolves and the butter and cream emulsify. Continue to simmer gently until the sauce reduces by half and thickens.
  4. Caramelize the Bananas: Preheat the grill to its highest setting. Peel the bananas and slice them lengthwise down the center. Place the banana slices on a lined baking sheet with the cut side facing up. Sprinkle the remaining dark brown sugar evenly over the bananas.
