For the Flapjacks
- 175g butter, plus extra for the tin
- 2–3 apples (about 350g), peeled, cored and chopped into small pieces
- 200g golden syrup
- 150g light brown soft sugar
- 300g porridge oats
- 50g dried apples, chopped
- 1/2 tsp ground cinnamon (optional)
Instructions
- Prepare the oven and tin: Heat the oven to 180°C (160°C fan)/gas 4. Butter the base of a 20 x 20cm square tin and line it with baking parchment to prevent sticking.
- Cook the fresh apples: Place the chopped apples along with 2 teaspoons of water into a small saucepan. Cook over medium heat for 3-4 minutes until the apples soften enough to be crushed but still retain some moisture. If necessary, add a little more water and cook a bit longer. Remove from the heat, then crush the apples roughly with a potato masher or fork. Transfer into a bowl and set aside.
- Melt the butter mixture: In the same pan, add the butter, golden syrup, and light brown sugar. Warm over low heat, stirring gently until the butter has melted and the sugar has fully dissolved. Remove from heat and set aside.
- Combine dry and wet ingredients: In a large bowl, mix together the porridge oats, chopped dried apples, and ground cinnamon if using. Pour in the buttery syrup mixture and the cooked apples. Stir thoroughly to combine all ingredients evenly.
- Transfer and bake: Spoon the flapjack mixture into the prepared tin. Press down firmly and level the surface using a spatula. Bake in the preheated oven for 25-30 minutes until the flapjacks are golden and bubbling around the edges.
- Cool and serve: Remove the flapjacks from the oven and allow them to cool completely in the tin. Once cooled, cut into 16 pieces. Store in an airtight container for up to three days to maintain freshness.
