  • 175g butter, plus extra for the tin
  • 2-3 apples (about 350g), peeled, cored and chopped into small pieces
  • 200g golden syrup
  • 150g light brown soft sugar
  • 300g porridge oats
  • 50g dried apples, chopped

Instructions

  1. Step 1: Heat the oven to 180C/160C fan/gas mark 4. Butter the base of a 20 x 20cm square tin and line it with baking parchment.

Add a little more water if needed and cook a bit longer. Remove from heat and crush the apples slightly with a fork or potato masher, then set aside in a bowl.
  3. Step 3: In the same pan, add the butter, golden syrup, and light brown sugar. Warm gently over low heat until the butter melts and the sugar dissolves. Remove from the heat.
  4. Step 4: In a large bowl, combine the porridge oats, dried chopped apples, and cinnamon if using. Pour in the buttery syrup mixture and the cooked apple. Stir everything together until combined.
  5. Step 5: Transfer the flapjack mixture into the prepared tin, pressing it down firmly and leveling the surface with a spatula.
  6. Step 6: Bake in the oven for 25-30 minutes until golden and bubbling around the edges. Allow to cool completely before cutting into 16 squares.
