Apple Cider Glaze

  • 12 tbsp apple cider

Instructions

  1. Prepare Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  2. Cream Butter and Sugars: In a large bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl to ensure even mixing.
  3. Add Wet Ingredients: Beat in the large egg and vanilla extract until just combined. Then add 1/4 cup apple cider and mix thoroughly until fully incorporated into the mixture.
  4. Combine Dough & Add Apples: With the mixer on low speed, gradually add the dry ingredients to the wet ingredients, mixing just until combined to avoid overmixing. Gently fold in the diced apples by hand to distribute evenly.
  5. Chill Dough: Cover the dough with plastic wrap and refrigerate for at least 1 hour or overnight until firm. This step helps the cookies maintain their shape during baking.
  6. Preheat Oven & Scoop Cookies: Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper. Scoop rounded balls of chilled dough, about 1.5 tablespoons each, and place them 2 inches apart on the prepared sheets.
