This Air Fryer Stuffed Peppers recipe features bell peppers filled with a savory mixture of ground beef, rice, onions, and tomato sauce, topped with melted mozzarella cheese. Cooked quickly and easily in the air fryer, it’s a flavorful and satisfying meal perfect for weeknight dinners.

Ingredients

Scale

Main Ingredients

  • 1 tsp olive oil
  • ½ cup diced onion
  • ½ lb ground beef
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder
  • 1 cup (8 oz) tomato sauce
  • 1 cup cooked rice
  • 3 bell peppers, halved
  • ¾ cup mozzarella cheese

Instructions

  1. Heat and Sauté: Heat the olive oil in a large skillet over medium heat until hot. Add the diced onion and sauté for about 5 minutes until softened and fragrant.
  2. Cook Ground Beef: Add the ground beef along with salt, black pepper, and garlic powder to the skillet. Cook for 8-10 minutes until the beef is fully browned and no longer pink.
  3. Combine Ingredients: Stir in the cooked rice and tomato sauce, mixing everything well. Remove the skillet from heat once the ingredients are thoroughly combined.
  4. Prepare Peppers: Place the halved bell peppers cut side up in the air fryer tray. Evenly fill each pepper half with the beef and rice mixture.
  5. Air Fry Peppers: Slide the tray into the air fryer and set the temperature to 360ºF. Cook for 17 minutes total, but after 15 minutes proceed to the next step.
  6. Add Cheese: After 15 minutes, carefully pull out the tray and sprinkle the mozzarella cheese evenly on top of each stuffed pepper. Return the tray to the air fryer to finish the remaining 2 minutes, allowing the cheese to melt.
  7. Serve: Once finished, carefully remove the stuffed peppers from the air fryer and serve hot for a delicious, hearty meal.

Notes

  • Use any color of bell peppers you prefer or a mix for visual appeal and varied flavor.
  • Make sure rice is fully cooked before mixing, or substitute with quinoa for a different texture.
  • To save time, use pre-diced onions or pre-cooked ground beef.
  • For a vegetarian version, substitute beef with cooked lentils or plant-based crumbles.
  • When adding cheese, watch carefully to avoid burning the cheese during the last few minutes of air frying.
