  • 400g can chopped tomatoes
  • 150g pitted green olives
  • 400g can butter beans, drained and rinsed
  • 8 bone-in, skin-on chicken thighs
  • small handful of flat-leaf parsley, chopped

Instructions

  1. Step 1: Preheat the oven to 200°C (180°C fan) or gas mark 6. Heat the olive oil in a large ovenproof frying pan over medium heat.
  2. Step 2: Add the sliced onion, chorizo rings, and both peppers to the pan. Season with a pinch of salt and pepper, cooking for about 15 minutes until the vegetables have softened and the chorizo has released its oils.
  3. Step 3: Stir in the sweet smoked paprika and chopped garlic, cooking for a few more minutes until fragrant.
  4. Step 4: Add the chopped tomatoes, green olives, and butter beans to the pan. Stir well to combine and season to taste.
