Ingredients

  • 1 large potato, diced
  • 1 small butternut squash, peeled, deseeded and diced
  • 1 aubergine, diced
  • 6 tbsp tikka masala paste
  • 3 tbsp vegetable oil
  • 2 onions, sliced
  • 680g-700g jar tomato passata
  • 400g can coconut milk
  • 2 red peppers, sliced
  • 2 courgettes, diced
  • Few coriander sprigs, to serve
  • Rice or naan bread, to serve

Instructions

  1. Step 1: Preheat the oven to 200°C (180°C fan/gas mark 6). In a large roasting tin, toss the diced potato, butternut squash, and aubergine with 2 tablespoons of the tikka masala paste and 2 tablespoons of vegetable oil. Season with salt and pepper, then roast for 30 minutes until tender and lightly caramelised.
  2. Step 2: While the vegetables roast, heat the remaining 1 tablespoon of oil in a large pan over medium heat. Add the sliced onions and fry until softened and golden, adding a splash of water if they begin to dry out. Stir in the remaining 4 tablespoons of tikka masala paste and cook for 3 minutes to release the flavors.
  3. Step 3: Pour in the tomato passata, coconut milk, and 100ml of water. Bring the sauce to a gentle simmer and let it cook for a few minutes to blend the flavors.
  4. Step 4: When the roasted vegetables are done, transfer them into the sauce along with the sliced red peppers and diced courgettes. Continue simmering for 10–15 minutes until all the vegetables are tender and the sauce has thickened slightly.
  5. Step 5: Garnish with fresh coriander sprigs and serve hot with rice or naan bread.
