Ingredients

Scale

Main Ingredients

  • 1 1/2 pounds ground beef (or chicken or pork)
  • Black pepper (to taste)
  • 4 cloves garlic, chopped
  • 12 tablespoons chili paste
  • 1 tablespoon fresh grated ginger
  • 1/3 cup chopped roasted peanuts
  • 1/3 cup tamari or soy sauce
  • 12 cups shredded green cabbage
  • 1/2 cup Thai basil, chopped
  • 1/4 cup chopped green onions
  • 2 cups cilantro, chopped
  • 810 flour tortillas, warmed

Peanut Sauce

  • 1/4 cup toasted sesame seeds
  • 1/2 cup roasted peanut oil
  • 1/4 cup creamy peanut butter
  • 2 tablespoons rice vinegar
  • 2 tablespoons tamari or soy sauce
  • 1 clove garlic, grated
  • Chili flakes (to taste)

Instructions

  1. Cook the Beef: In a large skillet over medium heat, add the ground beef seasoned with black pepper. Break up the meat as it cooks until it is browned, about 5 minutes.
  2. Add Aromatics and Sauce Ingredients: Stir in the chopped garlic, grated ginger, and chili paste, cooking for an additional minute to release their flavors. Add the chopped roasted peanuts and tamari or soy sauce, bring the mixture to a simmer, and cook until the sauce thickly coats the beef, about 3-5 minutes.
  3. Incorporate Vegetables: Stir in the shredded green cabbage, chopped Thai basil, and green onions. Remove the skillet from heat once combined.
  4. Warm the Tortillas: Place each flour tortilla in the microwave for 15 seconds to soften and make them pliable for rolling.
  5. Assemble the Rolls: Spoon the beef mixture down the center of each tortilla. Top generously with chopped cilantro. Fold the tortilla over the filling, then fold in the sides and ends, rolling it forward to form a neat roll. Repeat for all tortillas.
  6. Prepare the Peanut Sauce: In a bowl, whisk together the roasted peanut oil, creamy peanut butter, rice vinegar, tamari or soy sauce, grated garlic, and chili flakes until smooth and creamy.
  7. Serve: Serve the peanut beef rolls warm with the peanut dipping sauce on the side. Garnish the sauce with toasted sesame seeds and additional chopped peanuts if desired.
  8. Optional: For a more substantial meal, serve the rolls alongside steamed or fried rice.

Notes

  • You can substitute ground chicken or pork for the beef to vary the recipe.
  • Adjust chili paste and chili flakes to taste depending on preferred spice level.
  • Microwaving tortillas briefly softens them, preventing cracking when rolling.
  • The peanut sauce can be made ahead and stored in the refrigerator for up to 3 days.
  • Add fresh lime juice to the sauce for an extra citrusy tang.
